What it is.
A tray's specification is decided by the lidding. A tray that runs through a film-sealing line needs a flat, dimensionally consistent flange, because the seal is only as good as the surface it is made against — and a flange that varies by a millimetre across a pallet will produce leakers.
A tray for open service has no such constraint and can be built lighter and cheaper. So the first question is not size, it is whether the tray is sealed, lidded or open.
